Mini Carrot Cakes

Carrot cake is a staple dessert to have for Easter so how about we we make carrot cake carrots! These are easily made using a pizza cake slice mold and then simply decorating them to look like carrots. A great addition to your Easter dessert table.

How to Make

You can opt for any flavor cake you’d like, but for the purpose of this theme, I made carrot cake. I like to make things easy so I went with Duncan Hines Carrot Cake mix.

Mix up the batter then using an ice cream scoop, add about 1 1/2 scoops into each cavity. Then bake them per the instructions on the package. I usually follow timing for cupcakes, but be sure to check them to be sure you’re not over baking.

While baking, you can make your frosting. If you’d like to make your own American Buttercream, you can use my recipe and tips to help you.

HOW TO MAKE AMERICAN BUTTERCREAM

However, you can certainly use a store bought frosting for these. Cream cheese frosting would pair really nicely.

Notes

  • Be sure cake has completely cooled before adding frosting
  • Use gel food coloring as opposed to water based. This will help keep your frosting from thinning out and will provide a brighter color
